PJC Culinary Management     Procedures & Uniform Policy

                              For Safety & Sanitation & Professional Reasons

 

  • Students must practice good personal hygiene, wash, wash, wash hands
  • Hair should be clean, neatly maintained
  • All hair should be under hairnet or approved hat
  • Trimmed mustaches are allowed/ long side burns & beards not allowed
  • Jewelry is not permitted except for wedding bands, no hanging ear rings
  • Shirts under the chef jacket should be plain white, non descript
  • Shoes worn in lab must be oil resistant, non skid. No tennis shoes
  • When in lab return items to exact location you found them
  • Do not overflow garbage bags, we have plenty of them
  • Dishwashing machine should be broken down and cleaned daily
  • Floors are mopped or scrubbed using hose method daily as needed (as assigned)
  • Clean-up spills as they occur
  • All work stations are to be cleaned and organized before anyone leaves lab
  • Student shall not leave lab until work is complete or excused by instructor
  • All items stored in cooler/freezer/dry must be date marked
  • Students are asked to note items that are empty or about to run out
  • Store raw meats on the bottom shelving and cooked above
  • Do not store items directly on the floor
  • Students are not allowed into the office without permission
  • Student phone calls should be made during break and outside of lab or classroom
  • Cell phones are not permitted in class or lab
  • Eating & Drinking of beverages at assigned areas only
  • Food or college equipment is not allowed to leave the kitchen
  • Do not borrow items from students without there knowledge
  • Work together as a team
  • All change of clothes should be in the rest rooms, not in the lab

Students with Disabilities

 

For students with a disability that falls under the Americans with Disability Act or Section 504 of the Rehabilitation Act, it is the responsibility of the student to notify Disability Support Services to discuss any special needs or equipment necessary to accomplish the requirements for this course. Upon completion of registration with the Disability Support Services office, specific arrangements can be discussed with the instructor.

 

Syllabus Information

 

It is the intention of all Instructors of this program to accomplish the objectives as listed on individual course syllabi.  However, circumstances may arise which prohibit the fulfilling of this endeavor. Therefore all syllabi are subject to change. When possible you will be notified of any change in advance of its occurrence.

 

Website Information

 

An attempt is made to update and keep the website current. Handouts and class discussion during the term take precedent over outlines, syllabus and course material found on this website.

 

General Information

 

Program has heavy lifting and standing requirements. You must have Minimal lifting ability of 30 pounds or more.

Students with certain food allergies should consult with coordinator before enrolling.

 

 

"PJC provides an institutional email account to all credit students. Pirate Mail is the official method of communication, and students must use Pirate Mail when communicating with the College. In cases where companion software is used for a particular class, emails may be exchanged between instructor and student using the companion software."
